- Bring water to the boil, then add galangal, lemongrass, kaffir lime leaves, shallots, tomatoes, and fish sauce. When the soup boils, add shrimps and mushrooms. Wait until the shrimp is done, then add coconut milk or fresh milk. Toss in some smashed tiny chillies, as many or as few as how spicy you prefer. Season with lime juice to serve.
